This has become my go-to quick & easy cake for special occasions. It is SO easy! And very yummy. I love being able to just throw everything into the bread pan and set it and forget it. I can clean house, run errands, and take care of the baby all while the cake is baking. When Daniel was 4 weeks old I threw this into the bread machine , set it going, finished cleaning up the house, packed him into the car, went to the airport to pick up Grandma. Came back & everyone was at my house for dinner, it was my aunt’s birthday and I was a hero because in the midst of doing everything else with a new baby I had birthday cake! And it was so easy, only about ten minutes of my time.
If you don’t have the Zojirushi bread machine check your bread machine’s manual for instructions on baking cakes or quick breads.
2 large eggs
1/3 cup honey
1/2 cup vegetable oil
1/2 cup brown sugar
1 Tablespoon vanilla extract
1 Tablespoon almond extract
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon espresso powder, optional
1/3 cup Dutch-process cocoa
1 2/3 cups AP Flour
2 cups shredded, unpeeled zucchini, gently pressed
1 cup chocolate chips
1/2 cup chocolate chips
1/2 cup heavy cream
Set Zojirushi on Cake setting. Add liquid ingredients to bread pan. Mix dry ingredients together then sprinkle into bread pan over liquid ingredients. Press start. When machine beeps to add additional ingredients add the zucchini & chocolate chips.
When cake finishes remove pan from machine and let cool for 10 minutes before removing cake from pan.
For Ganache warm cream and chips over medium heat until chips are melted. Stir until fully incorporated and pour over cake, allow to run down the sides.
Slice & serve with ice cream. Yummy!
